Composition

Bitter orange marmalade
Passito of Pantelleria mousse

N. 10 approx. Square-shaped shortcrust tartlets large size

Bitter orange marmalade
230 g.- whole oranges
170 g.- granulated sugar
2 g.- pectin

Method
Cook the whole oranges in boiling water for 40-50 minutes, drain and mix with the remaining ingredients. Cool until it reaches the desired consistency. Keep in an airtight container in the fridge.
Passito of Pantelleria mousse
150 g.- sugar
100 g.- egg yolks
200 g.- passito
10 g.- fish glue
150 g.- lemon juice
500 g.- semi-whipped cream

Method
Make a custard with passito and heat at 82°, add the fish glue previously softened in cold water, the lemon juice, cool at 38°, then add the semi-whipped cream.
