Composition

Alcoholic strawberry filling
Light mint-flavoured panna cotta

n. 7 approx., shortcrust tartlets large size

Alcoholic strawberry filling
200 g.- sugar
200 g.- water
200 g.- syrup
20 g.- fish glue
75 g.- vodka
75 g.- strawberries purée

Method
Prepare a syrup , boil the water and the sugar. Once cooled, heat the syrup and add the fish glue. Mix and add the vodka and strawberries purée.
Light panna cotta
200 g.-full- cream milk
n. 1.- vanilla bean
10 g.- fresh mint
500 g.- cream at 35% fat content
85 g.- sugar
18 g.- gelatine leaves
250 g.- semi-whipped cream

Method
Prepare the gelatine in cold water. Heat the cream with the sugar, the milk, mint leaves and vanilla. Add the gelatine and let dissolve the mixture. Finally add the semi-whipped cream.
