Composition

Seared tuna
Onions jam
Pepper cream

n.10 mignon square-shaped shortcrust tartlets with brisé pastry

Seared tuna

200 g.- red tuna
To taste – salt

Method

Prepare diced tuna and sear on both sides in a non-stick frying pan, 1 minute per side. Add the salt.

Onions jam

N.5 – onions
150 g.- sugar
To taste – salt

Method

Simmer the onion, cut it into thin strips. Cook in a pan with the sugar for 30 minutes approx.

Peppers cream

n.6- red and yellow peppers
100 g.- vegetable stock
40 g.- olive oil
To taste- salt

Method

Clean the peppers removing the seed , prepare diced peppers and blend with vegetable stock ,olive oil and salt.

Preparing the dish

Put the diced and seared tuna over the tartlet, put over the tuna the onion jam, serve all with a small bottle or a small bowl of peppers cream.
